Start the week off with this simple batch of lentils. I love topping salads with them, on a jacket potato with goats milk yogurt, heated up with rice or quinoa or made into a quick soup. And can we talk about affordable?? The cost of all this breaks down to about $4.
prep + cook 2 hours | serves ~6 (or great as a batch cook for up to a week!)
1 bag dried lentils (choose your fave color)
1 onion, finely chopped
3 small cloves garlic
Ham, speck, prosciutto (optional) minced
1 bay leaf
Get the onion, garlic and ham (if using) started over a moderate/low heat in a heavy bottomed pot with a splash of olive oil. Cook until soft.
Add the lentils, bay leaf and peppercorns and cover with boiling water. Bring back to a boil and reduce to low heat and cover and cook 1-2 hours until the lentils are soft. Serve or store for up to a week.
